Crumbed Whiting with Pea Salad

Serves 4; Prep: 15 mins; Cook: 10 mins; Nutritional Value: Low-fat

Ingredients:
1 cup Cornflake crumbs
1 tablespoon lemon pepper seasoning
2 tablespoons chopped dill
2 tablespoons Praise Traditional Mayonnaise
12 IGA Whiting Fillets
Cooking Oil Spray
1 cup Birds Eye Baby Peas
80g baby spinach leaves
1/2 cup torn mint leaves
1/4 cup bottled no-fat French dressing

Method:
Combine crumbs, lemon pepper seasoning and dill.
Lightly spread mayonnaise onto whiting fillets.
Coat in crumb mixture.
Place on lightly oiled oven tray.
Spray with cooking oil.
Cook in hot oven (200C) for 10 minutes.
Meanwhile, boil baby peas. Drain.
Combine peas, spinach leaves, mint leaves and dressing.
Serve whiting with salad.
